Fat is the most versatile ingredient in baking. Depending on how it's incorporated, it produces tenderness, flakiness, richness, or moisture retention — sometimes all four.
The Shortening Effect
The word "shortening" comes from the culinary term "to shorten" — meaning to interrupt gluten development, producing a tender, crumbly texture. Fat is a gluten interrupter. How you use it determines the texture you get.
The Four Roles of Fat in Baking
1. Tenderness (Fat coats gluten strands) When fat is creamed into a batter or rubbed into flour, it coats the flour particles and prevents gluten from developing. The result is a tender crumb. This is the mechanism in cakes, cookies, and muffins.
2. Flakiness (Fat creates steam layers) When fat is incorporated in cold, solid pieces (as in pie crust or biscuits), it remains separate from the flour. In the oven, the water in the fat converts to steam, pushing the dough layers apart. The fat melts and the steam escapes, leaving distinct flaky layers.
3. Richness and Moisture (Fat carries flavor and moisture) Fat carries fat-soluble flavor compounds (vanilla, citrus zest, spices) and contributes to the perception of moistness. A cake made with oil stays moist longer than one made with butter because oil remains liquid at room temperature, while butter solidifies.
4. Aeration (Fat traps air during creaming) When butter is creamed with sugar, the sugar crystals cut into the fat, creating tiny air pockets. These air pockets expand in the oven, contributing to rise. This is why creaming butter and sugar "until light and fluffy" is not optional — you're building structure.

Butter's water content is both an asset and a liability. The water produces steam (flakiness), but it also contributes to gluten development. Oil-based cakes are more moist because oil doesn't contribute to gluten development at all.
Temperature Matters
Cold fat = flakiness (steam layers) Room temperature fat = tenderness (gluten coating) and aeration (creaming) Melted fat = density and chewiness (no air incorporation, minimal gluten interruption)
This is why brownie recipes often use melted butter — the dense, fudgy texture comes from the fat's inability to trap air when liquid.
